Healthy Tomato Beans Rice

Ingredients:<br />2 medium sized tomatoes <br />1/2 cup beans <br />1 large onion finely diced <br />1/2 tsp mustard seeds <br />1 1/2 tbsp soaked chana dal <br />1-2 medium-sized red chillies <br />1 tsp cumin seeds <br />1 inch ginger grated <br />1 tsp garlic chopped <br />1/2 tsp sambhar masala <br />6-8 curry leaves, green chillies <br />4 cups cooked rice <br />1-1 1/2 tsp ghee <br />Salt & Pepper<br />Cilantro for garnishing<br /><br />Preparation:<br />Heat the ghee in a saucepan over a medium flame. <br />Put in the mustard seeds. <br />As soon as the seeds start to pop, put in the red chillies, green chillies and diced onions.<br />Add the dry spices, turmeric powder, cumin seeds, garlic, ginger and soaked chana dal.<br />Put in the tomatoes, sambar masala, salt and pepper. Mix well.<br />Add the rice and mix.<br />Add the beans and curry leaves.<br />Remove from the heat.<br />Spread the rice in a shallow vessel and serve.
