This show of Food Diaries with Chef Zarnak Sidhwa aired on 27 September 2019. <br /> <br />If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this Youtube channel or go to our Website: https://www.masala.tv/<br /><br />Banana Raisin Fritters:<br />Ingredients:<br />Ripe bananas 4<br />Sugar 1-½ cups<br />Wheat flour 1-½ cups<br />Semolina ½ cup<br />Eggs 3<br />Cardamom powder 1 tsp<br />Nutmeg powder ½ tsp<br />Vanilla essence 1 tsp<br />Raisins 1 tbsp<br />Clarified butter as required<br />Method:<br />Mix sugar with 1 tbsp clarified butter and adds in the eggs and beat well. Mix wheat flour and semolina and add the mashed bananas, cardamom and nutmeg powders, vanilla essence, raisins, set aside for few hours and then heat clarified butter, add in tablespoonfuls of the fritter batter and deep fry till golden. Let excess clarified butter drain and then serve hot for tea.<br /><br />Omelette Curry: <br />Ingredients for Omelette:<br />Eggs 4<br />Spring onions (chopped) 2<br />Green chilies (chopped) 6<br />Coriander leaves ¼ cup<br />Red chili powder 1 tsp<br />Ginger garlic paste 1 tsp<br />Turmeric ½ tsp<br />All spice powder ½ tsp<br />Salt to taste<br />For Curry:<br />Onions (sliced) 2<br />Tomatoes (chopped) 2<br />Curry leaves 2 <br />Lemon juice of 2 lemons<br />Salt to taste<br />Oil as required<br />To Grind:<br />Coconut 1 cup<br />Whole red chilies 12<br />Cashew nuts ¼ cup<br />Coriander seeds 1 tbsp<br />Cumin seeds 1 tsp<br />Fennel seeds 1 tsp<br />Poppy seeds 1 tsp<br />Sesame seeds 1 tsp<br />Dry mango powder 1 tsp<br />Turmeric ¼ tsp<br />Ginger 1inch piece<br />Method:<br />Heat oil, add onions and sauté till golden add curry leaves and tomatoes and cook till soft. Add ground masala and water and cook, add salt, simmer and set aside. In a bowl mix ingredients for omlette. Heat oil, add a ladleful of omlette mixture and cook on both sides till done. Repeat till all mixture is used up and a few omlettes are made. Set aside. When cold cut in cubes or strips. Gently add omlette pieces in the hot curry just before serving. Add lemon juice and serve with boiled rice.
